Carrot Cake

A modern take on a classic tea-time treat. Lots of carrots (of course!), coconut and pecans, which we think will renew your appreciation for carrot cake! Our light cream cheese frosting ends all light cream cheese frostings so we've gone ahead and layered it throughout the cake as well as the top! Finished off with a caramel pecan brittle, you will never eat carrot cake from anyplace else!  

Ingredients
Sponge: Eggs, Carrot, Pecans, Flaked Coconut, Brown Sugar, Wheat Flour, Oil, Cinnamon, Vanilla, Sodium Bicarbonate, Baking Powder
Frosting: Cream Cheese, Sugar, Butter, Vanilla
